The recipe can be tried with different vegetables combinations.
This was very simple to make and turned out delicious!! The recipe is very versatile, you can add any vegetables you like. Adding fried or fresh tofu would also be a good addition if you’re looking to add a protein!
Ingredients:
2 udon noodle portions
1 bundle of bok choy
~5 dried shiitake mushrooms
1 large carrot
1/2 red onion
3 cloves garlic
green onion
2-3 tablespoons soy sauce
dash of rice vinegar
~1 tablespoon of sugar
sesame oil for cooking
salt, pepper to taste
How to:
cover the dried shiitake mushrooms in boiling water. Let this sit to rehydrate the mushrooms (you don’t have to use dried, but this is what I had!)
cook the udon noodles according to the package instructions
mix soy sauce, rice vinegar, sugar, salt and pepper in a bowl. Set aside for later
in a large pan, sauté the sliced red onion and sliced carrot in sesame oil until everything is soft
add the minced garlic to the pan
drain the soaking mushrooms and thinly slice them
add bok choy and sliced mushrooms to the pan and stir (add more sesame oil as needed)
season with salt and pepper to taste
once the bok choy has slightly cooked down, add the cooked udon noodles to the pan
add the soy sauce mixture and stir to combine everything
garnish with sliced green onion
