Healthy chick pea salad recipe which will keep you energetic
Recipe: 1 can of chickpeas, drained Juice of 1/2 lime 1/2 cup crumbled feta cheese 1 avocado, cut into cubes 1 tablespoon cilantro. I trimmed the leaves from the stems and gave them a rough dice 1/2 teaspoon cumin 1/4 teaspoon chili powder 1/4 teaspoon salt
My life is super busy and physical so I try to eat a lunch that won’t weigh me down for the rest of my day. Also, trying to make healthier food choices this year. Hope you enjoy it and/or find ways to make it even better!
Different variations to the recipe:
I made one very recently with heirloom cherry tomatoes, cucumber, chick peas, and avocado, a little olive oil, lemon juice and feta.
I have one more suggestion: put the lemon juice and olive oil (equal parts) into a mason jar with a minced clove of garlic and some salt. Herbs/black pepper can be added to. Shake. Use that as your dressing – it makes it sooooo much creamier compared to when they’re added separately!
